Tunks, a frequent guest chef at the annual Boca Bacchanal festival, is a culinary star on the Washington, DC food scene, best known for PassionFish restaurants and for managing more than seven restaurants in the capital of the city. A nation with its partners at Passion Food Hospitality.
Before the pandemic, there was the American tavern District Commons and its first and only foray into the counter with Burger, Tap & Shake. Both were popular for years, but then COVID-19 emptied nearby office buildings along Pennsylvania Avenue.
Before that, it had a wide range of concepts to build on through its long-running but now closed restaurants, such as:
- Penh, serving Asian food
- DC Coast, where you made it locally sourced before it was a trend
- Fuego Cocina y Tequilera with a menu of authentic Mexican dishes
- Ceiba is a popular Latin American and Caribbean location for the power elite a few blocks from the White House. It was the last to have flavors that fit particularly well here at SoFlo at Corvina Seafood Grill.
“This menu is the best of some of those restaurants, my favorites that will do well in this climate,” explains Tunks. “That’s how we came up with the name Corvina, and it’s a … tropical island sensation, a bit of Latin America. You know, we have a multi-ethnic back of the house: people from Guatemala, El Salvador. It’s a melting pot in the kitchen, just like South Florida food. “

“It’s kind of clever the way we’ve converted the windows to open accordion-style,” adds Tunks, who now lives in SoFlo. “He opened the restaurant. It has an elegant resonance, but it is not suffocating. It is going to be a restaurant that feels fun and looks fun and fun. I am impressed with the design. I think it will be impressive when it opens. “

“The Corvina is a fish from South America,” he says. “We were looking for a name, and we thought, ‘That’s exactly it. We are like the name: we have some South American flair on the menu. ‘It seemed like it just worked. “

One of the sous chefs previously worked at the nearby Rebel House and introduced the kitchen team to Latin American markets and other product sources. “It’s been nice having him on board to help mediate some of these meetups and greetings,” says Tunks.
They’ve even gotten advice from locals like George Patti of MEAT Eatery & Taproom. “It’s great to have local contact here, to choose their brains,” adds Tunks.
The menu
“Boca is great, but there are some needs,” says Carras, who lives in Highland Beach. “You want to come in and feel some energy and a vibe, something different. There are a lot of old-school restaurants that are doing very, very well. You have many good restaurants. But there is nothing out there that is exciting. “
